Knoydart Farm Ltd., is owned and operated by Angela, Frazer and Adam Hunter. They are located at the Antigonish/Pictou County Line in Nova Scotia on Route 245 overlooking the Northumberland Strait with Prince Edward Island in the distance
In 1998 they decided to buy the dairy farm in Knoydart, halfway between New Glasgow and Antigonish. Over the years they transitioned the farm to organic and added the cheese making facility in 2009, which makes the farm unique.
The Farm Operation is based on a 70 cow dairy herd. The farm is one of two Certified Organic Dairy Farms East of Quebec and did sell certified organic fluid milk under The East Coast Organic Milk Brand.
The Production of Cheese at the on farm cheese processing facility commenced in December of 2010. The Cheese is produced utilizing certified organic milk produced by the Knoydart Herd of Jersey X Holstein Dairy Cows.
The Cheese Processing Plant is also Certified Organic and is Federally Inspected by C.F.I.A. therefore the product produced is not just limited for sale in Nova Scotia.
The cheese produced is a Cheddar type cheese and two recipes are followed: the Knoydart Cheeses have as their recipe guideline, an English Recipe that of Double Gloucester and the Dunmaglas Cheese is based on the Welsh recipe for Caerphilly.
The young Knoydart Cheeses have had various Herbs, Spices and Fruits added to them so as to offer a unique flavour to the mild flavoured cheese.
You will find Frazer at the New Glasgow Farmers Market on the third Saturday of every month. Their next date at the market will be this Saturday, July 18, 2015. He’ll have fresh curds plus a wide selection of Knoydart Cheddar Cheeses , Old ,young and flavoured.
